Mama's Minestrone soup has a nice mild Italian flavour. The base is beef, with the addition of garlic, onion, tomato and herbs. This soup is very adaptable. We like to add browned mini meatballs, and an Italian vegetable mix like onion, zucchini, tomato and carrots. You can serve it topped with shredded pizza cheese accompanied with garlic bread.
