Loaded Baked Potato Soup
Take our Country Potato Cheddar Soup Mix to a whole new level! This is a hearty, creamy bowlful of delicious.
What You Will Need
1 Pk. Country Potato Cheddar Soup Mix
2 cups Milk or Light Cream
2 Onions, Diced
2 Carrots, Diced
3 Stalks Celery, Diced
3 Strips Bacon
2 Cups Cheese, Shredded
1/2 Cup Sour Cream
Sliced Chives or Green Onion
6 Cups Water
Directions
Dice the bacon into pieces about 3/4" wide. In a large heavy bottomed saucepan, cook the bacon until crisp, stirring so it cooks evenly. With a spoon, remove the bacon bits to a paper towel. Drain off some of the bacon grease, leaving about 2 Tbsp. in the pan, disposing of the remainer. Add the onions to the pan and continue to cook over medium heat, stirring every few minutes, until they are a rich golden colour. Do not rush this process. After the onions
are golden, stir in the carrots and celery. Then add the soup mix, stirring, then add 6 cups of water. Cook over medium low heat, covered, stirring every few minutes, for about 40-45 minutes, until carrots are tender.
Sprinkle the shredded cheese over the soup, reserving 1/2 cup for garnish. Stir in the milk or cream, and continue to cook until it just begins to bubble.
Plate the soup and garnish with a sprinkle of bacon bits, cheese, chives, and a dollop of sour cream.
Makes 6 dinner size servings.
