Dill Pickle Soup has it's origins in Poland, where a version of this has been made for years. The soup has a base of chicken and potato, and it has lots of carrot and celery with a hearty seasoning blend. You can add chicken but it is at it's best if you add browned chunks of Polish Sausage, along with some fresh or frozen vegetables, a cup of pickle juice and a couple of chopped dill pickles.
